Iron Goddess

Aroma and taste are lightly roasted and slightly sweet with hints of orchid. Iron Goddess (of Mercy) or Ti Kuan Yin is a very traditional oolong which comes in several grades. This is a premium grade Ti Kuan Yin, which does not have the bitter notes of the lower grades. Oolongs are the most complicated teas to manufacture and have a wonderfully complex, but also simple flavor, which can change with each successive steeping. Oolongs are semi-oxidized teas which can be anywhere from 10% - 80% oxidized. Sometimes the leaves do not fully unfurl until the 3rd or 4th steeping, so every cup is a little different.
